This is one of my favorite afternoon snacks. You can also see rice puto/muffins served in some Filipino gatherings and occasions. Below is the recipe on how to make it. I hope you will enjoy as much as I do. 2 cups rice flour.
1/2 tsp. salt.
1 cup white sugar.
3 tsp. baking powder.
2 cups coconut milk.
2 tbsp. melted butter.
1 egg.
- Mix all the dry ingredients.
-Add the coconut milk , butter, egg to the dry mixture and blend well.
-Pour the batter into individual molds.
-Steam for 20-30 minutes or until a toothpick inserted comes out clean.
